Chilled Tomato Soup (WF, GF, DF)

A refreshing, no-cook classic soup.


  • 6 ripe juicy tomatoes (or 2 x 440g cans)
  • Juice of 2 oranges
  • Basil, marjoram or oregano, to taste
  • 1 small cucumber, chopped finely
  • ½ capsicum, chopped finely
  • 2 sliced shallots, chopped finely


  1. Puree tomatoes, orange juice and herbs in blender.
  2. Add cucumber, capsicum and shallots to blended soup.
  3. Chill and serve.
