Gingerbread (WF, GF, DF)

Everyone loves gingerbread. This is a gluten and dairy free version of the traditional recipe.  Ginger is excellent for settling an upset tummy and improving circulation.


  • 125g butter (or dairy-free alternative)
  • ½ cup sugar
  • 1 egg yolk
  • 2 tablespoons golden syrup
  • 2 cups gluten free plain flour
  • 1 teaspoon cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon gluten free bi-carb soda
  • Nuts and seeds for decoration


  1. Preheat oven to 180C and grease two baking trays.
  2. In a mixer cream the butter and sugar until smooth, add egg yolk and syrup and beat again. 
  3. Add dry ingredients and mix together. 
  4. Knead dough and roll out, cut into shapes and decorate with nuts and seeds.
  5. Bake for about 15 minutes or until golden brown.
