Taste of Queensland Biscuits (WF, GF, DF)

These biscuits are delicious and showcase some of Queensland's finest ingredients that we are able to source locally such as macadamias, ginger, orange and chocolate. That's right; some cocoa beans (Cocoa Farm brand) are being grown in North Queensland.


  • 2 1/2 cups of brown rice flour
  • 3/4 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 1 cup butter or dairy-free alternative
  • 1/2 cup sugar (or 1/4 cup xylitol)
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tablespoon grated orange zest
  • 1 cup finely chopped dark chocolate (dairy-free if desired)
  • 1/2 cup chopped raw unsalted macadamias
  • 1/3 cup chopped crystallised ginger


  1. Preheat oven to 180°C.
  2. Line 2-3 biscuit trays with baking paper.
  3. In a medium bowl sift flour, bicarbonate of soda and salt.
  4. In a large bowl, cream the butter with the sugars until smooth.
  5. Add egg and mix well.
  6. Add flour mixture and mix well.
  7. Stir in the orange rind, chocolate, macadamias and ginger.
  8. Drop rounded teaspoonfuls onto biscuit trays leaving at least 5cm between for expansion.
  9. Bake for 10-23 minutes or until lightly golden brown.
  10. Cool the biscuits on the trays for 1 minute than transfer to a rack to cool completely.
