Ingredients:
- 10 dates
- 15 cashew nuts
- 150g or 2 medium sweet potatoes
- 1 cup grated coconut
- 1/2 cup sugar
- 4 tablespoons ghee (solid)
Method:
- Grate sweet potato and chop dates into small pieces.
- In a saucepan, heat ghee, add grated coconut and sugar and cook, on low heat, until sugar melts.
- Add grated sweet potato and cook on low heat until it chages colour. Add dates and cashews and mix well.
- Serve in small bowls with a sprinkle of toasted shredded coconut on top.
