A simple, quick salad for all occasions.
Ingredients:
1 Beetroot, finely grated
1-2 Carrots (depending on size) finely grated
1/4 cup sultanas or currants
1/2 cup chopped walnuts
Optional - 1/4 cup shredded coconut
Dressing:
2 Tbls red wine vinegar
1/4 cup olive oil
2-4 Tbls lemon juice
Salt & pepper to taste
Method:
Grate beetroot & carrots and mix in all other ingredients, adjust dressing ingredients to your taste.
