Pecan Pie (GF, WF, DF, EF)

DREAMY PECAN PIE

A lovely version of the classic pecan pie.

INGREDIENTS
MAKES 5 Serves


PECAN BASE

  • 1/2 cup almonds
  • 1/2 cup pecan nuts
  • 1 cup dates
  • 2 tablespoons carob powder
  • 1/2 cup date puree
  • 1 cup coconut shredded

FILLING

  • 1/2 cup hazelnuts
  • 1/2 cup almonds
  • 1/2 cup date puree
  • 1 tablespoon carob powder
  • 1/2 cup pulpy orange juice or freshly squeezed orange juice

garnish: 1/2 cup pecan nuts

METHOD

  1. Put all base ingredients into a food processor and process until fine and clumped together
  2. Press into a 23cm (9in) round baking dish
  3. Bake at 150 degrees (300 F) for 15 minutes or until the base is firm and golden
  4. Put filling ingredients into a food processor and process until smooth
  5. Pour filling into cooked base. Scatter pecan nuts on top
  6. Put in refrigerator to cool and set for at least 1 hour. Serve chilled.
