DREAMY PECAN PIE
A lovely version of the classic pecan pie.
INGREDIENTS
MAKES 5 Serves
PECAN BASE
- 1/2 cup almonds
- 1/2 cup pecan nuts
- 1 cup dates
- 2 tablespoons carob powder
- 1/2 cup date puree
- 1 cup coconut shredded
FILLING
- 1/2 cup hazelnuts
- 1/2 cup almonds
- 1/2 cup date puree
- 1 tablespoon carob powder
- 1/2 cup pulpy orange juice or freshly squeezed orange juice
garnish: 1/2 cup pecan nuts
METHOD
- Put all base ingredients into a food processor and process until fine and clumped together
- Press into a 23cm (9in) round baking dish
- Bake at 150 degrees (300 F) for 15 minutes or until the base is firm and golden
- Put filling ingredients into a food processor and process until smooth
- Pour filling into cooked base. Scatter pecan nuts on top
- Put in refrigerator to cool and set for at least 1 hour. Serve chilled.
